Sun-Dried Tomato Stuffed Flounder
Ingredients:
2 T. julienne-cut sun-dried tomatoes, finely chopped
2 T chopped black olives
1 C. Deli artichoke and spinach dip
2T panko bread crumbs
1 ½# flounder fillets
2 t. roasted garlic-herb seasoning
Cooking spray
Directions:
Preheat oven to 400 degrees. Combine tomatoes, olives, dip and bread crumbs. Coat fish with seasoning and spray. Place on baking sheet. Place ~ 1 T of dip mixture in middle of each fillet. Gently roll fillet around filling. Bake 15-18 minutes until fish and filling are 145 degrees (fish will be opaque and separates easily). Enjoy!
